1 common problem we face is: we always cook too much. The food we prepared is enough to feed 4 mouths...sigh....last night we had spaghetti and campbell soup. Its our 1st time having spaghetti with mushroom & herbs pasta sauce and mushroom & seafood campbell soup. I was too embarrassed to take the pictures of both our spaghetti and soup. ZH cannot finish his portion so you can imagine the amount of food on his plate. We added in mushrooms, lean pork and breast chicken to our spaghetti, again its a bit too much. Overall I liked the taste of the pasta, but the campbell soup was too salty. The next day we had Seafood spaghetti, with mushrooms.
This is 1 of our favourite meals : 3 in 1 pot ( 3= lettuce, sausage & chicken wings) and cuttlefish with radish soup. The 3 in 1 is not a problem, sometimes I will cook a bit more rice. Problem lies with the soup. Looking at the slow cooker, I think its enough for 4 persons again ! Its all the radish fault, I already bought the smallest one yet its still so huge. Sometimes its so difficult to prepare a meal for 2. We often ended up eating too full or throwing away the extra food!

I face the same problem. For raddish and old cucumber, I will cut into 2 parts and use only 1 part for cooking. However, the 2nd part will have to be cooked asap, usually within 3 days. So we will end up eating the same dish twice within the week.
My problem is I dunno when is the next time I am going to cook. So I have to cook everything at 1 go.
